The farm-to-table dining experience at Callaloo focusses on fresh, local, and seasonal produce. Serving the chef’s interpretation of comfort classic food in an indoor outdoor setting offering an informal dining experience from sunrise to sunset Island-style breakfasts, freshly baked breads, and pastries are served alongside Caribbean inspired smoothies and breakfast bowls bursting with local spices, fruits, and flavors. At lunchtime, relax while the morning's catch is cooked on the grill. Choose from carefully curated selection of local and international wines. Each evening, specialty dinners are prepared, cooking with all natural, locally grown, seasonal, and responsibly sourced produce reflecting the Eat With Six Senses philosophy.

Share pizzas from the authentic wood-fired oven or discover churrasco, the South American tradition of cooking meat on long skewers over a live fire, served with flat breads and sauces bursting with spices and flavor. Or indulge in the immune boosting smoothies, and cold pressed juices or selection of cold brew ice coffees.

The resort’s signature restaurant is where creativity, experimentation, and emotion unite to engage all the senses. A commanding ocean front location where the fresh sea air is punctuated by the roar and crash of the rollers. Designed for sharing and created celebrating the techniques of the region, the menu features local spiny lobster and red snapper from our raw bar alongside local delicacies such as conch or 'lambi' ceviche and yellow-fin tuna. Communal plates of mahi mahi are served in the center of the table with local cassava, breadfruit, okra, sea moss and plantain. From the fire comes coal roasted cuts of the day, all prepared with minimal intervention, maintaining the integrity of each ingredient.
